I have a confession to make…I can’t stand shop-bought granola! It’s way too sweet and either hard as a rock or as powdery as muesli. I always try to make my own whenever I have a hankering for it although some brands like Rude Health do some nice versions but they are a bit pricey for what you get. My Store Cupboard Granola is made up out of whatever I have in the cupboard so please feel free to use what you have at home; add a variety of nuts or even chocolate nibs (after cooking) if you like. It’s quite a savory version of granola so if you have a sweet tooth, you might have to add more honey or some dried fruit at the end!
50g nuts (I used pecans and flaked almonds)
20g desiccated coconut
1 tsp cinnamon
2 tbsp oil
1 tbsp honey
1. Preheat oven to 180c/350f.
2. Mix all the dry ingredients together on a baking tray.
3. Add the oil and honey and mix to coat everything as best you can.
4. Place in the oven and bake for about 30 minutes or until golden brown stirring every 5 minutes to prevent burning and to get an even colour.
