Sometimes it’s time to lay off the fry-ups and introduce some semblance of health into your diet and this month I have been trying to do just that with my breakfast routine, at least during the week. As I’m working on my portfolio from home this month, it’s very easy for me to whip up a smoothie bowl out of any ingredients that I have in the house and this one has become one of my favourites. You can serve this in a glass or a bowl but I do think it looks more appetising in a bowl and you can experiment with different toppings this way e.g. fresh berries, flaked almonds, chopped hazelnuts. I’m not going to lie though, I do miss my cheese scones from Marks & Spencer of a morning but I do feel much better having had a smoothie!
Note: I use frozen bananas as I tend to toss any ripe bananas in a freezer bag and into the freezer to use later but fresh will work just as well.
1 small banana, fresh or frozen
1 handful baby spinach
1 tsp almond butter (I use Meridian)
200ml unsweetened almond milk
Simply blend the ingredients together until smooth, place in a bowl and top with your chosen toppings.
